Cinnamon

Wow! Sly just bought some new cinnamon. She got it at our local health food store. As we continue to make our way towards using as much organically grown/produced stuff in our kitchen as possible, we are slowly replacing staples with organics.

This particular cinnamon comes under the brand name "Simply Organic" and it is the best cinnamon I have ever tasted. I mean it is really amazing. I don't know if we just got a good batch, or it's the type of cinnamon, or it's just fresh, but it is really tasty. Sweet, no bitterness, and just a hint of heat. I am now officially using cinnamon in everything. Rate this posting:

First post and pasta

Sly and I recently bought a pasta maker for our KitchenAid. And we LOVE it. We’ve eaten pasta steadily for the past few weeks. Sly made her first ever batch of lasagna yesterday completely from scratch and it was delectable…seriously.

We differ in our techniques and tastes especially for Italian food. I prefer basil with a touch of oregano and hint of thyme. About a 4/2/1 ratio. Sly on the other hand is all oregano: bold nothing to hide. It works out well. We both love garlic

I made some crab ravioli the other day. I decided to differ from my 4/2/1 method of Italian seasoning and used tarragon. Bad choice. The tarragon really made the sweetness of the crab “pop” and it kind of ruined the rest of the dish.

Sly has also begun making grissini, those thin, crisp breadsticks. They're very good and additions of cheeses and spices lends towards an infinite variety.
